The Producer
The Revenant range is born from the same family as False Bay Vineyards and Waterkloof Estate — the vision of Paul Boutinot, who set out in 1993 to find a site capable of producing truly distinguished wines. He found it on the south-facing slopes of Schapenberg, overlooking False Bay. Revenant celebrates the glorious rebirth of long-lost Western Cape winemaking traditions: wild fermentation, minimal intervention, and the beauty of the blend. The range has a special link to Boutinot’s personal winemaking history — the Revenant White is the very same Sauvignon Blanc-Chenin Blanc blend as the first white wine Paul made in France back in 1984. Vintage & Terroir
The 2025 vintage Sauvignon Blanc is sourced from cool coastal vineyards where the Atlantic influence ensures slow ripening, bright acidity, and concentrated flavours. Wild fermentation adds a dimension of complexity that sets Revenant apart from conventional Sauvignon Blanc — this is a wine with real personality and a sense of place, not just another crisp white.
In the Cellar
Wild yeast fermentation is the non-negotiable heart of the Revenant philosophy. The natural cultures from the vineyard itself drive a slower, more complex fermentation that builds texture and depth without losing the fresh, zesty character of the grape. Minimal intervention throughout — just the gentlest of hands guiding the wine from vineyard to bottle.
Tasting Notes
Appearance: Pale straw with a green-gold tinge.
Nose: Zesty grapefruit, tropical passionfruit, and lime zest, with subtle mineral and fynbos-like herbal undertones that hint at the wild fermentation character.
Palate: Lively and expressive, with bright citrus and tropical fruit flavours carried by a vibrant acidity. The wild fermentation adds a textural richness and savoury complexity that elevates this beyond everyday Sauvignon Blanc. Clean, focused, and thoroughly refreshing.
Finish: Crisp and mineral-driven, with lingering grapefruit and a subtle savoury note.
Food Pairing
Perfect with fresh West Coast oysters, grilled calamari, or a zesty ceviche. Try it alongside a goat’s cheese and beetroot salad, green asparagus with hollandaise, or a simple plate of sushi. Serve well chilled at 8–10°C.
