The Producer
Diemersfontein Wine & Country Estate has been a Wellington landmark for three generations of the Sonnenberg family. Famous worldwide as the birthplace of South Africa’s original Coffee Chocolate Pinotage, the estate’s white wine range is equally impressive — a testament to the versatility of the Wellington terroir and winemaker Francois Roode’s skill across both red and white varieties. The estate sits in the protected bowl formed by the Hawequa and Groenberg mountains, with vineyards spreading across the rolling hills of one of the Cape’s warmest wine regions. Multiple Michelangelo Gold medals, Platter’s recommendations, and a growing reputation for quality whites have cemented Diemersfontein’s place among South Africa’s most loved wine estates.
Vintage & Terroir
The 2024 Sauvignon Blanc vintage in Wellington was marked by warm, dry days and cool evenings — conditions that concentrate the grape’s trademark green and tropical aromatics while preserving the zippy acidity that makes great Sauv Blanc so refreshing. Diemersfontein’s white wine blocks benefit from cooler pockets within the estate where afternoon breezes from False Bay funnel through the mountain gaps. The decomposed granite soils contribute a subtle minerality to the wine, while the warmer Wellington climate adds a tropical generosity that sets this Sauvignon Blanc apart from cooler-climate examples.
In the Cellar
The Sauvignon Blanc grapes were harvested early in the morning at peak aromatic ripeness and rushed to the cellar for gentle whole-bunch pressing. The free-run juice was cold-settled overnight before being racked to stainless steel tanks for a slow, cool fermentation. This controlled approach preserved the wine’s vibrant fruit aromatics and bright acidity. No oak was used — the goal was pure, unadulterated Sauvignon Blanc character. The wine was bottled young to capture its youthful freshness and aromatic intensity.

Food Pairing
The ultimate seafood wine — pair with fresh West Coast oysters, grilled calamari, or pan-fried hake with tartare sauce. It’s also a winner with sushi, a green Thai curry, or a classic Greek salad with feta. For a proper South African match, try it alongside a snoek pâté on toast or a fresh crayfish braai. Serve ice-cold at 6–8°C.
