The Producer
The Stettyn Deed Cap Classique Brut NV is named after the original title deed for Stettyn farm — signed by Governor Mauritz Pasques de Chavonnes on 26 September 1714. More than three centuries later, the estate remains one of Worcester’s most respected producers, crafting wines that carry the weight and character of the Breede River Valley’s warm days and cool cellar nights.
The Estate
Stettyn lies in the heart of Worcester, where the Breede River Valley delivers the ideal combination of well-drained soils, warm sunshine and cool evenings. The estate’s winemaking philosophy is rooted in the terroir: minimal intervention, careful canopy management and precise harvest timing that preserves natural acidity — essential for méthode cap classique of this calibre.
The Cap Classique
Crafted in the traditional méthode cap classique, this Brut NV undergoes secondary fermentation in the bottle — the same method used in Champagne. The result is that signature fine, persistent mousse and the complexity that sets MCC apart from tank-method sparkling wine. Platter’s Wine Guide 2026 awarded it 4 Stars, a recognition earned on the merits of the wine alone.
Tasting Notes
Fine creamy mousse, luscious stone and citrus fruits up front, followed by nutty and flattering flinty notes on the mid-palate. Extra-fine bubbles carry a lingering, elegant aftertaste. Pale gold in the glass with a persistent bead — textbook MCC structure with Stettyn’s unmistakable Breede Valley warmth underneath.
Food Pairing
Pour alongside fresh West Coast oysters, parma ham or prosciutto, red figs and brie, or a light sushi platter. Equally at home as an aperitif or beside a simple fruit dessert. Six bottles per case. Claim your case and cellar a piece of history.
