To achieve this, Kotzé used 15% whole-bunch fermentation and precise oxygen management. Moreover, he matured the wine for 18 months in neutral and third-fill barrels—some with American oak heads. These choices enhance texture while letting the fruit shine.
Importantly, the winemaking is minimal. No fining, no aggressive filtration. You may notice sediment—natural in honest wines like this.
