Description
A Tribute to a Coastal Icon
Along the rugged shores of the Western Cape, a distinctive bird patrols the intertidal zone: the Cape Oystercatcher. Known affectionately in Afrikaans as the “Swarttobie,” this striking, black-plumed bird with its bright orange-red bill is a symbol of our pristine coastal ecosystem. This wine is a tribute to the “Tobie”—a celebration of the unique natural heritage that makes our corner of the world so special.
Crafted from a Specially Selected Parcel
Just as the Oystercatcher is a special part of our coastline, this Sauvignon Blanc is sourced from a specially selected parcel of vines on the Stettyn estate. This particular block is known for producing grapes with exceptional aromatic intensity and a distinctive, flinty character that evokes the salinity of a fresh sea breeze. This selection process results in a wine with a true sense of place, capturing the spirit of the Cape in every bottle.
In the Glass: Complex, Mineral & Focused
The ‘Tobie’ Sauvignon Blanc is a clear step up in complexity. It pours a pale straw colour with a green hue. The nose is a captivating blend of gooseberry, green fig, and wet-stone minerality, layered with notes of lime zest and elderflower. The palate is focused and linear, with a crisp acidity and concentrated fruit core that leads to a long, saline, and incredibly refreshing finish.
Perfect Pairings for a Premium White
The distinct minerality and elegance of this wine make it a perfect match for dishes from the sea. Serve well-chilled with:
- Freshly shucked West Coast oysters with a squeeze of lemon
- Pan-seared scallops or grilled calamari
- Line fish ceviche with lime and coriander
