This is exactly what XCellar exists for: a parcel of premium unlabelled Stellenbosch Syrah from one of the Cape’s better cellars, bottled under cork four years ago, cellared for two years in barrel and another two in bottle — and never released under the producer’s label.

Vintage & Terroir

The 2021 vintage delivered a strong year for Stellenbosch reds — moderate ripening, balanced acid retention, and concentrated small berries that translate directly into the structure you taste in the glass.

The fruit comes off mountain-soil vineyards with two decades of vine age behind them — old enough to deliver depth and concentration, young enough to keep the fruit fresh. Stellenbosch is widely regarded as one of South Africa’s strongest Syrah terroirs; the conditions for peppery, structured Syrah are textbook here.

In the Cellar

Hand-picked in March at peak ripeness. Fermentation took place in open concrete tanks — a traditional method that gives Syrah’s aromatics room to develop without the masking effect of stainless steel.

The wine then aged for 24 months in barrel, followed by a further 24 months in bottle before release. Four years of cellar time is unusual at this price point, and it shows in the integration on the palate.

Tasting Notes

In the glass: deep ruby-red with garnet edges, showing the colour evolution of a wine that’s had time to settle.

On the nose: delicate black pepper leads, with subtle baking spice and a layer of dark berry fruit underneath. The aromatics are restrained rather than showy — characteristic of well-cellared Stellenbosch Syrah.

On the palate: rich and well-structured. The soft tannins are the most striking thing — four years of cellar time has done its work. Lingering peppery depth on the finish, with the dark fruit holding through to a long, balanced close. Beautifully integrated and elegant.

Serve at 16–18°C in a large red wine glass. Drinking superbly now — open, decant briefly, and pour. Will hold and continue to develop for a further 5–8 years in good cellar conditions.

Technical: 14.5% alc, pH 3.69, TA 6.0 g/l, RS 2.7 g/l.

Food Pairing

A natural match for South African red-meat cooking. Try with Karoo lamb on the spit, weekend oxtail or venison potjie, braaied ribeye with chimichurri, or hard sheep’s-milk cheese. Is this really premium Stellenbosch Syrah?
Yes. It’s a surplus parcel from a top Stellenbosch cellar that bottled the wine four years ago but ultimately didn’t release it under their own label. The grape, the terroir, the winemaking — all premium Stellenbosch. The only thing missing is the front label and the cellar-door markup that would normally come with it.

What’s the difference between Syrah and Shiraz?
Same grape (Vitis vinifera Syrah), different naming convention. South African producers tend to use “Syrah” for cooler, more peppery, structured Northern-Rhône-style expressions and “Shiraz” for warmer, fruit-forward, Australian-style versions. This wine sits firmly on the Syrah end of the spectrum — pepper, spice, structure, restraint.

How long can I cellar this wine?
It’s drinking superbly now. With four years of cellar time already behind it (24 months in barrel, 24 in bottle), the tannins are integrated and the fruit is settled. It will hold and continue to evolve for a further 5–8 years in temperature-controlled conditions (12–16°C, dark, on its side).
