The Producer

Opstal Estate has been in the same family since 1847, when JC Rossouw first cultivated this land in the Slanghoek Valley. Seven generations later, winemaker Attie Louw is the one in the cellar — a direct descendant of that founding family, working alongside his father Stanley and brother Zak. The modern chapter of Opstal winemaking began in 1950, when Carl Everson — Stanley’s grandfather — chose to make and bottle his own wine rather than send his grapes to the local cooperative. That decision set the estate on its own path. Stanley Louw first made the Opstal Blush in 2006, inspired by the rosés of Provence, and the wine has improved with every vintage since.

Vintage & Terroir

The 2025 Blush Rosé is grown at the head of the Slanghoek Valley in the Breedekloof Wine District, cradled between the Slanghoek Mountains and the Badsberg Mountains. One hundred hectares of vines planted across soils that change completely within metres. The Grenache, Carignan and Cinsault for this wine come from blocks chosen specifically for their ability to produce characterful, structured rosé. The Slanghoek Valley’s high rainfall of 1,350mm, mountain breezes and alluvial soils give the fruit a freshness and minerality that keeps everything precise.

In the Cellar

The Blush Rosé is made by the saignée method — juice bled off from a red wine ferment in the earliest stages of skin contact, ensuring pale colour and delicate aromatics without tannin extraction. After bleeding, the juice is fermented at cool temperatures in stainless steel to preserve freshness and fragrant aromatics. No malolactic fermentation, retaining the natural acidity that gives the wine its structure and food-friendliness. Minimal intervention throughout. Bottled early to lock in the bright, clean fruit character. 13.26% alcohol. Dry. Elegant. Made for a table.

Tasting Notes

Appearance: Pale salmon-pink with delicate blush tones and a clean, bright appearance.
Nose: Fresh strawberry, watermelon and a hint of fynbos — clean and dry with a gentle herbal aromatic quality typical of the Slanghoek Valley.
Palate: Light and elegant with quiet presence. Dry, with fresh acidity providing structure and a subtle mineral backbone. The saignée method gives a fine red-fruit depth without heaviness.
Finish: Clean and refreshing with a slightly savoury, mineral edge that lingers pleasantly.

Food Pairing

Excellent with a summer seafood spread — grilled crayfish, sashimi or fresh oysters from Saldanha Bay. Also great alongside charcuterie, soft ripe cheeses or a Cape-style mezze. A natural braai aperitif while the coals get going, or a companion to grilled chicken sosaties or linefish. Serve at 8–10 °C.
