Vintage & Terroir
The 2024 vintage in Wellington produced vibrant, aromatic Sauvignon Blanc grapes thanks to warm days balanced by cool evening breezes from False Bay. The Ovation Sauvignon Blanc fruit comes from carefully selected vineyard blocks within the Wellington appellation, where the surrounding Hawequa and Groenberg mountains create a natural amphitheatre that moderates temperatures. Decomposed granite and clay soils contribute subtle minerality, while the region’s generous sunshine drives tropical fruit development. The result is a Sauvignon Blanc that combines the freshness of cooler-climate examples with the ripe, generous fruit character that Wellington is known for.
In the Cellar
Harvested in the cool pre-dawn hours to maximise aromatic intensity, the grapes were gently whole-bunch pressed and the free-run juice cold-settled before a slow, controlled fermentation in stainless steel tanks. No oak was used — the focus was on preserving the wine’s bright fruit character and natural zestiness. The wine was bottled early to capture its youthful vibrancy and fresh aromatics. Simple, clean winemaking that lets the fruit speak for itself.
Tasting Notes
Appearance: Pale straw with a slight green tinge.
Nose: Fresh and inviting aromas of passion fruit, guava, green pepper and grapefruit, with grassy nuances adding complexity.
Palate: Crisp and refreshing, with lively tropical fruit and citrus flavours supported by a delicate minerality and zippy acidity. The palate is clean and uncomplicated — pure, easy-drinking Sauv Blanc pleasure.
Finish: Bright, clean and refreshing, with a fruity citrus tail that makes this wine dangerously easy to drink.
Food Pairing
A brilliant all-rounder for casual meals — pair with grilled fish and chips, a fresh garden salad, or a chicken Caesar wrap. It’s equally at home alongside sushi, a prawn linguine, or a simple cheese and cracker platter. For a South African braai, it’s the perfect companion for braaied crayfish tails or a fish braai with lemon and herb butter. Serve ice-cold at 6–8°C.
