The grapes are harvested at full ripeness from a low-yield growing area β that’s the first signal of quality. Lower yields mean more concentrated fruit, more intense flavour, more character in the glass. The winemaking that follows is classical and uncompromising: fermentation in open-top cement vats with up to six pump overs daily to extract colour, structure, and that characteristic deep-fruit intensity. Then 12 months in French oak β predominantly 2nd and 3rd fill barrels β which means the oak adds texture and harmony without masking what the vineyard produced.
The result is exactly what Bottelary Stellenbosch Cabernet should be: fruit-driven, full-bodied, and built to last.
What’s in the Bottle
On the nose: Black pepper up front β that’s the Bottelary terroir speaking. Then layers of dark berry fruit, blackcurrant and dark plum, with a warm chocolate undercurrent from the French oak maturation. Deeply aromatic and inviting.
On the palate: Full-bodied with the kind of weight that fills the glass properly. Dark fruit leads, supported by velvety soft tannins that are well-structured without being aggressive. The oak integration is seamless β warmth and a touch of mocha without any wood domination. Long, fruit-driven finish.

Drinking Window & Serving
Drinking beautifully now β give it 30 minutes in a decanter to open it up properly. Best served at 16β18Β°C. Will continue to develop through 2028β2030 for those with the patience.

This is a braai wine in its purest form β lamb chops, beef short rib, boerewors straight off the coals. It’s equally exceptional with slow-roasted leg of lamb or a Sunday potjie. Hard yellow cheeses β aged gouda, mature cheddar β work beautifully. If you’re going the indoor route: beef fillet, mushroom-based pastas, or a rich oxtail stew on a cold evening.
