The Producer
Stettyn Family Vineyards is one of the Breede River Valley’s most storied estates, with roots stretching back to 1714. Acquired by the Botha family in 1818, the estate has been lovingly farmed for eight generations. Today, under the guidance of winemaker JM Crafford and CEO Sarel Meyer, 438 hectares of vineyard thrive in the sheltered valley between Villiersdorp and Worcester. The name Bąbelki means “the bubbly” in Polish — a playful nod to Stettyn’s Prussian heritage and the city of Szczecin.
Vintage & Terroir
This sparkling rosé is a blend of 60% Chardonnay and 40% Pinot Noir, combining the best of both varieties. The Chardonnay contributes crisp acidity and citrus backbone, while the Pinot Noir adds delicate red fruit character and that gorgeous salmon-pink colour. Grown in Stettyn’s Worcester ward vineyards, the warm days and cool mountain evenings create ideal conditions for sparkling wine base grapes.
In the Cellar
The Pinot Noir spent a brief period on its skins to extract the desired blush colour before being blended with the Chardonnay. The base wine was fermented cool in stainless steel, then carefully carbonated using the sparged method to create a fine, persistent mousse. The wine was bottled young to capture maximum freshness. With a residual sugar of 9.1 g/l, total acidity of 7.4 g/l and pH of 3.31, it strikes a perfect balance between fruity and fresh.
Tasting Notes
Appearance: Pretty salmon-pink with a lively, persistent stream of fine bubbles.
Nose: Fresh strawberry, raspberry and rose petal, with hints of citrus blossom and candied orange peel.
Palate: Crisp and refreshing, with bright red berry fruit, a touch of creaminess and lively bubbles that dance across the palate. Off-dry with beautifully balanced acidity.
Finish: Clean and moreish, with lingering strawberry and a citrus zing.
Food Pairing
Pop it as a celebration apéritif or pair with fresh strawberries and cream, smoked salmon canapés, or a light prawn cocktail. Also brilliant with sushi or a summer fruit tart. Serve ice-cold at 6–8°C.
